Fermented onions. Trying to keep up with OMD

    A friend gave me onion plants that she grew from seed. She didn't know what variety they were. They turned out to be small shallot type. A million of them. What to do with them??

    Feeling patient and somewhat OCD yesterday, I cleaned about half of them and made a ferment with Himalayan salt, pepper corns, and a little mustard seed.

    We'll see what happens in a few days!
