Hello everyone :)
I'm looking for quick, easy, somewhat healthy, not too fancy (my husbands preference) meals for 2. Any suggestions would be greatly appreciated. I enjoy using allrecipies.com and foodnetwork.com

Here's a couple of tasty and very simple chicken dishes you may enjoy. Each serves 4 so you can have leftovers for another night (usually tastes even better reheated after the flavours have had more time to mingle:)).
Creamy Pesto Chicken & Bow Ties
[u]Ingredients</u>:
3 cups uncooked bow tie (farfale) pasta
2 tbsp butter or margarine
1 lb boneless, skinless chicken breasts (cubed)
1 can cream of chicken soup (regular or fat-free)
1/2 cup pesto (there are several good brands available in the grocery store, usually located near the spagetti sauce)
1/2 cup milk
[u]Directions</u>:
Cook pasta and drain. Meanwhile, heat butter in skillet. Add chicken and brown. Add soup, pesto and milk. Bring to a boil. Cook over low heat for 5 minutes. Stir in drained pasta, heat through and serve.
Serves 4
Country Chicken Skillet
[u]Ingredients</u>:
2 tbsp butter or margarine
1 1/2 pounds boneless, skinless chicken breast halves
1 cup water
1 pkg Knorr vegetable soup mix
1/2 cup sour cream
[u]Directions</u>:
Melt butter in large skillet over medium-high heat. Add chicken and ground brown, turning occasionally, about 5 minutes. Stir water, soup mix into skillet; bring to a boil. Reduce heat; cover and simmer, stirring occasionally, 10 minutes or until chicken is tender. Place chicken on platter. Remove skillet from heat; stir in sour cream. Spoon sauce over chicken. Serve over cooked and drained egg noodles.
Serves 4

Golly, Reekie, that first one was good- but if you keep putting recipes on the screen, tell me how to clean the saliva off my keyboard! I do like the idea of freezing the sauce portions, thanks.

btw, i served the creamy pesto & chicken bowties for my 9th anniversary this past august. it was a wonderful, delicious dish and loved by all in my family. thanks again for posting it!
