    Default Delicious Summer Dishes

    Anyone have any great summer meal ideas? The recipes that are meant to be served cold during these lazy, hazy, crazy days of summer!

    Here is my first offering...

    CURRIED CHICKEN SALAD

    1/2 cup mayonnaise
    2 tbsp fresh lime juice
    1 tsp sugar
    1 tbsp curry (you can start with less and add until it tastes right)
    1/2 tsp ground ginger
    1/2 tsp salt and pepper to taste
    2 cups cubed, cooked chicken
    2 cubed peaches
    1/4 cup sliced green onions
    1/4 cup slivered almonds

    Directions

    Combine mayo, lime juice, sugar, ginger, salt, pepper and curry. Stir in chicken, peaches and green onions. Cover and chill. Stir in almonds before serving.

    Variations
    You can also add raisins or apples. Add in cooked rice(increasing the mayo mixture to keep it moist enough)for a complete meal in a bowl.

    Makes 3 cups

    [u]Two Yummy Summer Treats</u>

    BLUEBERRY WALDORF SALAD
    Serves 8-10

    2 cups frozen blueberries
    2/3 cup sugar
    3 cups miniature marshmallows
    1 cup seedless grapes
    2 cups diced tart apples
    1/2 cup pecans
    1 cup whipping cream, whipped

    Place blueberries in blender container and blend at high speed. Combine blueberries, sugar and marshmallows in a medium bowl. Chill, covered, overnight. Add grapes, apples, and pecans to blueberry mixture. Fold in whipped cream.


    FRESH PEACH CAKE
    1 cup ( sticks) unsalted butter, at room temperature, plus more for the pan
    2 cups all-purpose flour, plus more for the pan
    1 1/2 cups sugar
    3 large eggs
    1 teaspoon salt
    1 teaspoon baking soda
    1 teaspoon cinnamon
    2 tablespoons milk
    2 cups sliced, peeled fresh peaches or 1 16-ounce can sliced peaches, drained
    1/2 cup chopped walnuts or pecans

    1. Preheat oven to 375F. lightly butter and flour a 13- by 9- inch baking dish.
    2. Cream the cup of butter and the sugar in a large bowl until light and fluffy. Beat in the eggs one at a time. Continue beating until pale yellow and fluffy. sift the flour, salt, baking soda, and cinnamon into a separate bowl. Fold the dry ingredients into the egg mixture. Fold in the milk, then fold in the peaches and walnuts. Pour the batter into the baking dish.
    3. Bake until a cake tester inserted into the center of the cake comes out clean, about 30 minutes. Cool the cake before slicing it. Serve warm with whipped cream or ice cream.
